Salad with Italian Sausage
Ingredients:

1 lb. SYRACUSE'S Italian Sausage (Mild or
Hot)
8-12 oz. Dry Penne Pasta
2-3 Roma Tomatoes, seeded and diced
1/2 c Mushrooms, sliced
1 Green Bell Pepper, peeled and diced
1 Red Bell Pepper
1/2 Red Onion
3 Green Onions, chopped
1 can Artichoke Hearts, quartered (optional)
1 lb. Fresh Asparagus, steamed and chilled
1 can Hearts of Palm
Fresh Basil (optional)
1/3 - 1/2c Combination Italian Cheeses, Shredded or Grated
(Fontina, Mozzarella, Provolone, Parmesan, Romano)
1 c Italian Salad Dressing
Olive Oil |
Instructions:

Cook penne pasta - al dente. Drain well & run
cold water over pasta - drain again. Toss with a little
olive oil, cover & refrigerate until you get other
ingredients ready. Add other ingredients and toss lightly.
Cook sausage on medium heat in a covered pan for 20 minutes,
turning 1-2 times during cooking. Sausage should be brown.
Uncover and cook 5 minutes longer. Do not overcook. Let
stand at room temperature for at least 20 minutes. Cut
at an angle about ¼” thick, add to pasta
salad and toss lightly. Remove pasta from refrigeration.
Add sausage slices and toss lightly. Add the next nine
ingredients and toss. Add Italian salad dressing, or dressing
or your choice and cheeses, tossing together. Sprinkle
with Basil leaves and chives. Refrigerate until ready
to serve.
