Cover bottom of frying pan with 1 Tbsp oil. When heated,
add sausage, cover and cook until done (about 30 minutes).
Turn occasionally while cooking. Meanwhile, peel and slice
potatoes & onion. In separate pan, heat remaining
oil and add onion. Cover and cook until tender. Add potatoes,
salt and pepper. Cover again and cook until potatoes are
tender & brown. Drain sausage and cut into bite-size
pieces then add to potatoes and onions. Serve with salad
and warm Italian bread.
